Francois Payard Bakery Promises a Treat to the New Yorkers
Francois Payard the famous pastry chef has announced the opening of Francois Pavard Bakery in partnership with Marlon Abela of MARC who run the A Voce restaurants in New York. It will be located on West Houston Street in downtown New York City. It will be a casual eatery with a seating for 20. It will have on offer Chef Payard’s signature pastries along with other baked goods and chocolates, sandwiches and salads for dining in or to-go options.
Traditional French pâtisserie selections include chocolate and vanilla éclairs, seasonal fruit tarts, and the “Tart Papa Payard” with puff pastry, crystallized sugar, pear, apple and dried fruit. There will be what he calls macarons Americaine which are inspired by classic American cookies and deserts. The list of treats that would be available is rather long and tempting for those with a sweet tooth. There would be rolled cakes, croissants, sugar brioche, lemon cake with fresh raspberry pepin and dusted coconut, chocolate mousse and many more.
Chef Payard has planned an opening for the end of summer or sometime early fall. There will be large windows in the kitchen so that people can watch the chefs in action. This is the first project resulting from the collaboration between Chef Payard and MARC. They have several other more ambitious projects planned that will roll out in the future.
